This started with chicken in addition to mayo, Parmesan, and a couple of other easy seasonings. Prep this in five minutes, bake for another 40 – 45 minutes, then you are ready to devour this wonderful chicken dinner!

- Mayonnaise (use Greek yogurt for a healthier option)
- Parmesan cheese (you can use sharp Cheddar or Asiago)
- Seasoning salt

Step 1: Baking chicken breasts is tricky. Brine or marinating them is an absolute must! Start by slicing the chicken breasts into three large strips or chunks.
Step 2: In a bowl with milk and buttermilk mixture, toss the breast strips/chunks and marinate for at least 20 – 30 minutes, preferably overnight.
Step 3: Mix the mayo, half a cup of Parmesan cheese, and seasonings.

Step 4: Into a baking dish, lay the chicken strips/chunks. On top, evenly spread the mayo mixture and sprinkle with the rest of the Parmesan cheese.

- 1 c. Parmesan cheese - divided or sharp Cheddar, or Asiago
- 1 teaspoon garlic powder
- 1 teaspoon seasoning salt
- 1/2 teaspoon black pepper
Instructions
- Into large strips or chunks, cut each chicken breast.
- In a bowl, combine the milk and buttermilk. Add the chicken strips/chunks and marinate for at least 20 - 30 minutes up to overnight.
- Set the oven to 375 degrees F.
- Mix the mayonnaise, 1/2 cup of Parmesan cheese, and seasonings in a small bowl until well combined.
- After marinating the chicken strips/chunks, transfer them into a 9 x 13-inch baking dish. Over the chicken, evenly spread the mixture and sprinkle with the remaining Parmesan.
- Place in the preheated oven and bake for 40 - 45 minutes or until the chicken breasts are fully cooked. To get them extra browned on top, broil for 1 - 2 minutes.
- Serve the melt in -your mouth chicken immediately with your favorite veggies, such as steamed fresh broccoli. If desired, season with fresh parsley. Enjoy!
