Hey fellow foodie! I’m so happy you made it to No Dash of Gluten! Where we make everything, and more importantly, eat everything – without gluten!
My name is Natasha, and I’m the founder and creator of NDOG. I’m a NASM-Certified Personal Trainer, Certified Nutritionist, and Behavior Change Specialist.
Shortly after having my son, I was diagnosed with something called Eosinophilic Esophagitis, or EoE for short.
EoE is an autoimmune disease that causes my body to hyper produce white blood cells (WBCs) in an attempt to “fight off” foods that I’m allergic to, thus resulting in esophageal dysfunction.
But, unlike most people with food allergies, my symptoms and reactions aren’t always immediate or clear. In fact, I was eating trigger foods for years and not realizing that my body wasn’t tolerating them.
When my body produces these extra WBCs, they actually start attacking my esophagus. Making it more narrow than a typical person’s, and it can cause eating and swallowing to be a real pain. Literally.
Long story short, gluten and dairy turned out to be my two biggest triggers. So I’ve had to learn to how to cook and eat my favorite foods without two of the most important ingredients.

Let me be honest about something: master chef I am not. I’m just a regular busy mom with a full time personal training job, who happens to enjoy writing, and really happens to love eating.
So all the recipes I’ll share will be basic; they’re not super fancy, but they are simple and easy to create, whether you follow a gluten free diet because of Eosinophilic Esophagitis or another allergy or autoimmune disease, or you’re just looking for a new healthy meal to add to the weekly lineup, there’s gobs of gluten free options here for you.
While not every recipe I share will eliminate the top 8 most common allergens (wheat, milk, soybean, tree nuts, peanuts, fish, eggs, and shellfish), they will be wheat (gluten) free, and mostly dairy-free. When I can, I’ll provide alternate ingredient ideas for the others.
So grab a plate, and more importantly, grab your coffee, and let’s figure out what we’re meal prepping this week.
