Savory cabbage roll skillet with ground beef, cabbage, bell peppers, diced tomatoes, and melty cheddar cheese. An easy, one-pan meal for busy nights!
Can I tell you a little secret? I’ve never loved making traditional cabbage rolls. The rolling, the tucking, the boiling—it’s a lot. But I do love the flavors—so warm, cozy, and nostalgic. That’s how this cabbage roll skillet was born, out of a mix of laziness and a craving for something hearty but not fussy.
I vividly remember the first time I made this. It was one of those chaotic evenings where I had no plan but a fridge full of random ingredients. There was a head of cabbage that had been in the crisper so long it was starting to guilt-trip me. So, I grabbed it, along with some ground beef and a can of tomatoes, and just started throwing things into a skillet.
When I served it, my husband took one bite and said, “Why haven’t we been eating this all along?” That’s when I knew I had a keeper. Since then, it’s been my go-to comfort meal. I even make it for friends when they visit—it’s that kind of dish that feels like a hug in a bowl.

Ingredient Notes:
Here’s the lowdown on why these ingredients work so well together:
- Ground Beef: A classic choice for its rich flavor. You could sub in turkey or chicken, but beef really shines here.
- Cabbage: The unsung hero of the veggie world. It softens beautifully and soaks up all the flavors.
- Bell Pepper & Onion: These add a sweet, savory balance and a nice pop of color.
- Diced Tomatoes: They keep the dish moist and add a tangy depth of flavor.
- Creole Seasoning: The secret to that bold, slightly spicy kick. Adjust it based on how adventurous you’re feeling!
- Cheddar Cheese: Melty, gooey goodness that ties everything together.
How To Make Cabbage Roll Skillet?
This recipe is simple enough that you can practically cook it with one hand while holding your phone in the other. Here’s how to do it:
- Brown the Beef
Start by browning the ground beef in a large skillet over medium heat. If there’s too much grease, drain some, but leave a little—it adds flavor. - Add the Veggies
Toss in your chopped onion and bell pepper. Let them cook for about 3–4 minutes until they soften. By now, your kitchen will smell amazing, and you might get some curious family members wandering in. - Mix in the Cabbage and Tomatoes
Add the cabbage, diced tomatoes (don’t drain them!), and all your seasonings. Give it a good stir, pop a lid on, and let it cook for 20–25 minutes. Stir occasionally to make sure nothing sticks to the bottom. - Top with Cheese
When the cabbage is tender and everything’s beautifully combined, sprinkle the cheddar cheese over the top. Cover the skillet for a few minutes until the cheese melts into bubbly, gooey perfection. - Serve and Enjoy
Scoop it into bowls and serve as is, or pair it with rice if you’re feeling extra hungry. Either way, it’s comfort food at its finest.
