10 Minutes Healthy Cookies Recipe
Ingredients
- 6 tbsp of peanut butter or any nut butter you like
- 6 tbsp of melted coconut oil or unsalted butter
- 1/3 c of Erythritol or any other sweetener you like
- 1 tsp of vanilla extract
- 1 large egg + 1 large egg white
- 1/2 c of coconut flour
- 1 tsp of baking soda
- A pinch of salt
- 1/3 c of sugar-free chocolate chips
Instructions
- In a mixing bowl combine 6 tablespoons of peanut butter (or any nut butter) with 6 tablespoons of melted coconut oil (or unsalted butter).
- Next add 1/3 cup of Erythritol (or your preferred sweetener), 1 teaspoon of vanilla extract, one whole egg and one egg white. Stir everything together until well combined.
- Now mix in 1/2 cup of coconut flour, 1 teaspoon of baking soda and a pinch of salt.
- Gently fold in 1/3 cup of sugar chocolate chips keeping some aside for sprinkling on top later.
- Cover the bowl. Place it in the freezer for 20 minutes to chill.
- Once chilled scoop out balls of dough from the mixture. Place them on a baking tray lined with parchment paper. Slightly press down on each ball. Sprinkle the remaining chocolate chips, over the top.
- Preheat your oven to 180°C (350°F). Bake the cookies for around 15 to 20 minutes.
