  • 1/3 c of Erythritol or any other sweetener you like
  • 1 tsp of vanilla extract
  • 1 large egg + 1 large egg white
  • 1/2 c of coconut flour
  • 1 tsp of baking soda
  • A pinch of salt
  • 1/3 c of sugar-free chocolate chips

Instructions
 

  1. In a mixing bowl combine 6 tablespoons of peanut butter (or any nut butter) with 6 tablespoons of melted coconut oil (or unsalted butter).
  2. Next add 1/3 cup of Erythritol (or your preferred sweetener), 1 teaspoon of vanilla extract, one whole egg and one egg white. Stir everything together until well combined.
  3. Now mix in 1/2 cup of coconut flour, 1 teaspoon of baking soda and a pinch of salt.
  4. Gently fold in 1/3 cup of sugar chocolate chips keeping some aside for sprinkling on top later.
  5. Cover the bowl. Place it in the freezer for 20 minutes to chill.
  6. Once chilled scoop out balls of dough from the mixture. Place them on a baking tray lined with parchment paper. Slightly press down on each ball. Sprinkle the remaining chocolate chips, over the top.
  7. Preheat your oven to 180°C (350°F). Bake the cookies for around 15 to 20 minutes.
