  • 1 1/2 lb. 650g flank steak, sliced against the grain (or ribeye steak, tenderloin, strip loin, strip steak…)
  • 1 1/2 lb. 650g baby yellow potatoes, quartered
  • 1 tbsp. olive oil
  • 3 tbsp. butter divided
  • 5 garlic cloves minced
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh rosemary chopped
  • 1 tsp fresh oregano chopped
  • Salt and fresh cracked pepper
  • Crushed red chili pepper flakes optional

The Marinade:

  • 1/3 cup soy sauce or coconut aminos for paleo and gluten-free
  • 1 tbsp. olive oil
  • 1 tbsp. hot sauce we used Sriracha
  • Fresh cracked pepper

Instructions
 

  1. In a bowl mix together the steak slices, with soy sauce, 1 tablespoon of olive oil a pinch of cracked pepper and 1 tablespoon of hot sauce (if desired). Let the steak marinate while you prepare the potatoes.
  2. Heat a frying pan over medium-high heat and melt 1 tablespoon of butter with 1 tablespoon of olive oil. Add the baby potatoes that have been quartered and sauté them for 4 minutes stirring occasionally. Cook for 4 to 5 minutes until the potatoes turn golden and become tender when pierced with a fork. Set them aside.
  3. In the same frying pan melt 2 tablespoons of butter over medium heat. Add minced garlic chopped thyme, and oregano along with a pinch of chili pepper flakes if desired. Stir for a minute until it becomes aromatic.
  4. Place the marinated steak slices in the frying pan. Cook each side for one minute or adjust according to your preferred level of doneness.
  5. If desired, pour in the marinade that was set aside earlier and cook for a minute.
  6. Add back the sautéed potatoes to the frying pan while gently reheating them in the butter sauce. Season, with salt. Add cracked pepper if needed.
  7. Once both the steak and potatoes have absorbed all those flavors remove from heat.
