After taking a slice of this delicate, fluffy beauty, I started pumping my fist in the air. After several botched Apple Cinnamon Cakes, I knew this one was the one. Of course, I had to eat a few more slices to be absolutely certain! Or I was just making an excuse to devour the entire cake by myself?
What You Need To Make This Cinnamon Apple Cake:

- Plain flour or all-purpose flour
- Baking powder
- Baking soda
- Salt
- Caster sugar or granulated sugar
- Red apple, peeled and roughly chopped
- Large eggs
- Vanilla extract
- Vegetable oil
- Greek yogurt
Cinnamon Topping Ingredients:
- Caster sugar or granulated sugar
- Ground cinnamon
- Butter
Sugar Glaze Ingredients:
- Icing sugar or powdered sugar
- Milk
To make this recipe gluten-free (you should use these ingredients instead):
- Use gluten-free flour blend instead of all-purpose flour.
- Use pure vanilla extract.

- Set aside your electric mixer, all you need to whip up this cake is a bowl and a spoon.
- You are welcome to use any kind of apple you prefer. I love the Royal Gala apples. Peel and chop the apples into roughly half-inch squares.
- When mixing the dry and wet ingredients, make sure not to over-mix.
- Sugar and cinnamon made up the crumble. Combine them with melted butter until it clumps like sand. Finally, sprinkle this on top of the cake batter.

- 120 ml 1/2 c. vegetable oil
- 210 g. 1 and 1/2 c. plain flour or all-purpose flour
- 150 g. 3/4 c. caster sugar or granulated sugar
- 2 large eggs
- 1 c. approximately 1 large red apple, peeled and roughly chopped
- 1 tsp vanilla extract
- 120 ml 1/2 c. Greek yogurt
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Cinnamon topping:
- 1 tbsp butter melted
- 50 g. 1/4 c. caster sugar or granulated sugar
- 1 tsp ground cinnamon
Sugar glaze:
- 1 –2 tbsp milk
- 30 g. 1/4 c. icing sugar or powdered sugar, sifted
Instructions
- Ready the oven. If using a standard oven, preheat it to 180 degrees C or 350 degrees F. Or at 160 degrees C or 320 degrees F if using a fan-forced oven.
- Using baking or parchment paper, line a greased 8-inch round cake pan.
- Place the flour, baking powder, baking soda, salt, and sugar in a large mixing bowl. Then, add the chopped apple and briefly stir.
- Whisk the eggs, vanilla, oil, and yogurt in another bowl.
- To the dry ingredients, add the wet ingredients and gently stir using a wooden spoon until just mixed.
- Into the prepared cake pan, spoon the batter.
- Mix the cinnamon, sugar, and butter until lumpy and wet. Sprinkle the cinnamon topping on top of the cake batter.
- Bake for 30 - 35 minutes until a skewer inserted in the center of the cake comes out clean.
- Once done, take the cake out of the oven and onto a wire rack to cool.
- In the meantime, whisk the sugar with 1 tbsp milk until smooth to make the glaze. To thin out the glaze, simply add another extra tbsp of milk.
- Over the cooled cake, drizzle the glaze.
