Keto is a high-fat, low-carb diet, meaning our body goes into a state of ketosis where it burns fat for fuel instead of carbs. We all know that the suggested net carbs change from person to person. But with ketosis, a person can reach 40 – 20 net carbs.
These Ham and Cheese Bites are like a needle in a haystack. There is so much grab-and-go or meal prep-style food but it can be difficult to find foods to fit this diet.
Ham and Cheese Bites
These homemade ham and cheese bites are delicious either warm or cold. Each bite contains 1.5 net carbs! These are the perfect low-carb breakfast. Also, an amazing good lunch when paired with a green salad or another low-carb side.
These grain and gluten-free bites are amazing! The ingredients are simple and easy to find.
What You Need To Make These Ham and Cheese Bites:
Ham: You can use any quality thick-cut ham. It’s also great to use leftover ham.
Cream Cheese: Either use full or reduced-fat cream cheese.
Coconut Flour: This provides the best fluffy texture. Although, you can use almond flour instead.
Baking Powder: Gives these cheesy bites loft and rise.
Shredded Cheese: I used sharp cheddar, but Swiss or other cheese works just fine.
Eggs: Grab the biggest eggs!
Steps To Make Ham and Cheese Bites
Step 1: Into small pieces, chop the ham to make two cups.
For this, I love to use small hickory smoked quarter ham. You can use ham without added sugar if you are watching your carbs.

Step 2: Mix the ham with the softened cream cheese until there are no lumps.
Step 3: Next, add the rest of the ingredients (shredded cheese, beaten eggs, coconut flour, and baking powder). Mix well until you have a soft dough.

Step 4: Place the dough in the fridge to chill for at least 10 minutes.
Make sure not to skip this step. This way you give the coconut flour time to soak up the egg mixture. You do not want flat bites, would you?
Step 5: Onto a baking sheet, scoop the mixture using a small cookie scoop. Leave some space between the dough balls.
Step 6: Bake in a preheated 350 degrees F oven for 20 – 23 minutes until the top of the bites is golden brown.

How to store
In an airtight container, store the bites and keep them in the fridge for up to 5 days.
These bites can also be frozen. Ensure that they are given time to cool to room temperature. To avoid clumping, freeze the bites on a baking sheet. Then, transfer to a freezer bag once the bites are hard.
How to reheat
Pop in the microwave and reheat in 30-second intervals.

Ingredients
- 3 eggs beaten
- 2 c. ham chopped
- 4 oz. cream cheese softened
- 1 1/2 c. shredded cheddar cheese
- 1/3 c. coconut flour
- 1/2 tsp baking powder
Instructions
- Set the oven to 350 degrees F.
- Mix the ham and cream cheese until fully blended.
- Throw in the rest of the ingredients and mix well until combined.
- Put in the fridge to chill for at least 10 minutes.
- Drop the dough onto a greased baking sheet using a small cookie scoop.
- Pop in the oven and bake for 20 - 23 minutes until the bites are golden brown.
