Ingredients

  • 1 large onion sliced lengthwise
  • 4 boneless skinless chicken breasts
  • 17 grams of zesty Italian salad dressing mix
  • 8 oz. fresh mushrooms sliced
  • 1 1/2 c. shredded mozzarella provolone parmesan blend cheese
  • 8 oz. fresh spinach
  • 8 oz.neufchatel cheese
  • 1 tsp salt to taste
  • 1 tsp pepper to taste

Instructions
 

  1. Coat a 9 x 13 baking dish with cooking spray and preheat the oven to 350 degrees F.
  2. Start by caramelizing an onion, then add mushrooms and cook until they begin to brown.
  3. Blend the Neufchatel cheese (light cream cheese) with the package of Zesty Italian Dressing mix in a small bowl.
  4. Arrange chicken breasts in a 9-by-13-inch baking dish.
  5. Spread the cream cheese mixture evenly on top of each chicken breast.
  6. Use a whole 8-ounce bag of fresh spinach to cover the pan's contents.
  7. Spread the onion and mushroom mixture evenly over the spinach.
  8. Season to taste with salt and pepper.
  9. Add the shredded mozzarella, provolone, and Parmesan cheese mixture on top.
  10. Bake for about 30 minutes, or until the internal temperature of the biggest breast reaches 170 degrees F.
