Ground beef, Italian sausage, mozzarella, pasta sauce, onion, and herbs come together in this Savory Italian Meatloaf with Cheese.
I’ve got a confession: I used to think meatloaf was kind of a punishment. You know what I mean? Those dry, sad bricks slathered in mystery ketchup glaze that show up in sitcoms or sad cafeteria trays? That was my entire meatloaf worldview.
Then this recipe happened.

I was honestly just trying to use up leftovers—some ground beef, a few slices of mozzarella, and part of a green pepper that was starting to look a little too “I’ve been here too long.” Out of desperation (and a little stubbornness), I tossed everything into a bundt pan, layered in cheese, and crossed my fingers. What came out of the oven wasn’t just edible… it was glorious. Juicy. Melty. Flavorful. My husband legit said, “This is the best thing you’ve made in months.” Rude, but fair.
Now it’s one of my ride-or-die recipes. And I hope it becomes one of yours too.

Why You’ll Love This Savory Italian Meatloaf with Cheese Recipe?
Okay, so here’s the scoop on why this Savory Italian Meatloaf with Cheese is nothing like the bland ones we all fear:
-
It’s basically an Italian sub disguised as dinner. We’re talking beef, sausage, garlic, onions, herbs, and cheese… all the cheese.
-
Surprise mozzarella center. You slice into it, and BOOM—melty, cheesy goodness right in the middle.
-
Bundt pan magic. It bakes evenly, looks kinda fancy, and flips like a dream.
-
Crusty cheese topping. The top layer of mozzarella (or provolone) turns into this golden, bubbly blanket that makes you want to cry a little.
-
Leftovers? Even better. If you manage to have any, that is.
Ingredient Notes:
This isn’t one of those recipes where you need three kinds of vinegar and a spice that only exists in the back of your grandma’s cupboard. Everything’s simple, familiar, and it works.
-
Ground beef + Italian sausage: This combo makes the meatloaf taste rich without being greasy. If you go full beef, just know you’ll miss that little sausage kick.
-
Onion + green bell pepper: Sweet and fresh. Dice them fine so they blend into the mix without overpowering.
-
Breadcrumbs + Parmesan: They hold it all together and add that nutty, salty umami we all secretly crave.
-
Pasta sauce: I usually use whatever’s open in the fridge. Marinara, garlic basil, whatever. Just don’t overdo it.
-
Herbs + seasonings: Italian seasoning, steak seasoning, garlic—it’s basically a pantry hug.
-
Mozzarella slices: Inside and on top. Because subtlety is overrated.
-
Eggs: Because your meatloaf should stick together, not crumble into sadness.
How To Make Savory Italian Meatloaf with Cheese?
Step 1: Get prepped.
Preheat that oven to 350°F. Spray your bundt pan like your future dinner depends on it (because it kinda does). Line a baking sheet with foil. Trust me on this one.
Step 2: Mix it all together.
Grab your biggest mixing bowl. Toss in the beef, sausage, chopped onion and bell pepper, breadcrumbs, cheese, sauce, herbs, eggs… all of it. Get your hands in there. You’re not just cooking—you’re building something beautiful.
Step 3: Make the cheese middle.
Press half the meat mixture into the bottom of the bundt pan. Lay down a circle of mozzarella slices (don’t skimp), then add the rest of the meat and smooth it out like a boss.
Step 4: Bake, round one.
Bake it for 45 minutes. It’ll start to smell like an Italian deli and a hug had a baby.
Step 5: Flip & cheese the top.
Carefully drain off the grease (seriously, carefully). Then flip it out onto that foil-lined sheet like you’re on a cooking show. Top with more cheese. Don’t be shy.
Step 6: Bake, round two.
Crank the oven up to 375°F and bake for another 15 minutes. You want the cheese bubbling and golden.

Step 7: Let it chill.
Rest it for at least 10 minutes before slicing. It helps the juices settle and keeps it from falling apart like your 20s.
Storage Options:
-
In the fridge: Keeps for up to 4 days. Reheat gently in the oven or microwave (but add a splash of water to keep it moist).
-
Freezer: Yes, you can freeze it! Slice and wrap it individually so future-you can thank current-you.
-
Lunchbox gold: Warmed up in a sandwich with a little sauce? Ridiculous.
Variations and Substitutions:
-
Swap in provolone, gouda, or even Havarti for the mozzarella.
-
Add chopped spinach or sun-dried tomatoes to the meat mix for extra flavor.
-
Use ground turkey or chicken sausage for a lighter version.
-
Spice it up with crushed red pepper or hot Italian sausage.
What to Serve with Savory Italian Meatloaf with Cheese?
Let’s be honest: meatloaf is a full vibe. But if you want to round it out…
-
Garlic mashed potatoes (duh)
-
Caesar salad or an arugula + lemon situation
-
Toasted ciabatta for scooping up sauce
-
A bold red wine or even an ice-cold root beer
Frequently Asked Questions:
Can I make it ahead?
Yup! Prep the whole thing, cover it, and refrigerate. Just add 10 extra minutes to the first bake.
Is this spicy?
Not unless you make it that way. But spicy sausage or red pepper flakes would be amazing if you’re into heat.
What if I don’t have a bundt pan?
No problem! Use a loaf pan or shape it by hand on a sheet pan. It’ll taste just as good, even if it looks less Instagrammable.
So there you have it: a Savory Italian Meatloaf with Cheese that flips the meatloaf script completely. It’s cheesy, juicy, packed with flavor, and has just enough personality to make you feel like a total kitchen wizard.
It’s the kind of recipe you pull out when you want something hearty, homemade, and just a little bit extra. And honestly? We could all use a little extra sometimes.
