  • 1/2 c 1 stick butter, at room temperature
  • 3/4 c granulated sugar
  • 1/4 c packed brown sugar
  • 1 c creamy or crunchy peanut butter your choice!
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 c all-purpose flour spooned and leveled
  • 1 tsp baking soda
  • 1/4 tsp kosher salt
  • 1/2 c seedless jelly
  • Additional jelly for topping
  • Melted peanut butter for drizzling
  • Chopped peanuts for garnish

Instructions
 

  1. Preheat the oven to 350°F (177°C). Prepare your baking pans. By lining them with parchment paper or silicone mats.
  2. In a mixing bowl. Beat the butter until it is smooth. Then add both sugars. Continue beating until the mixture is fluffy.
  3. Mix in the peanut butter. Until it is fully incorporated. Then add the egg and vanilla. Stir until the mixture is smooth.
  4. Add the flour on top of the wet ingredients without mixing. Followed by sprinkling the baking soda and salt over the flour. Gently stir these ingredients with a spoon. Before combining everything until just mixed. Be careful not to overmix.
