Instead of using a graham cracker crust you can go for a gluten-free option. You can. Find pre-made free graham cracker crusts at stores or make your own by blending gluten-free graham crackers, melted butter and a bit of sugar then pressing it into your pie dish. The rest of the ingredients. Coconut flakes, pineapple, cherries, pecans and whipped topping. Are naturally free from gluten. Just remember to check labels to ensure there's no gluten, especially, in condensed milk and maraschino cherries.
