1 c maraschino cherries, chopped

1/2 c pecans, finely chopped

1 can sweetened condensed milk

5 tbsp lemon juice

1 tbsp maraschino cherry juice

1 1/2 c whipped topping (plus extra for garnish)

Instructions

Let’s start by preparing the base:

First set aside the graham cracker crust that you’ve already prepared.

Now let’s move on to mixing the filling:

In a bowl combine the coconut flakes, drained crushed pineapple, chopped maraschino cherries and finely chopped pecans.

Next stir in the sweetened condensed milk.

Add the lemon juice and maraschino cherry juice to the mixture. Mix it all together well.

Gently fold in 1 1/2 cups of whipped topping into the mixture.

Now it’s time to assemble the pie:

Pour the filling into the graham cracker crust making sure to spread it evenly.

For a touch you can top it off with some whipped topping, for garnish.

Once everything is assembled, let chill and serve:

Place the pie in the refrigerator, for 3 to 4 hours until it sets perfectly.

When it’s nicely chilled and set you can enjoy this treat!

Notes

Converting this No Bake Millionaire Pie into a gluten-free version is surprisingly easy and doesn’t compromise its deliciousness. The main change is, in the crust. Instead of using a graham cracker crust you can go for a gluten-free option. You can. Find pre-made free graham cracker crusts at stores or make your own by blending gluten-free graham crackers, melted butter and a bit of sugar then pressing it into your pie dish. The rest of the ingredients. Coconut flakes, pineapple, cherries, pecans and whipped topping. Are naturally free from gluten. Just remember to check labels to ensure there’s no gluten, especially, in condensed milk and maraschino cherries.
