What You Need To Make This Mexican Beef Rice Recipe:
- Ground beef
- Onion
- Garlic powder
- Salt
- Black pepper
- Taco seasoning
- A can (15 oz) whole kernel corn
- Beef broth
- Water
- Salsa
- Tomato sauce
- Long-grain rice
- Shredded cheddar cheese
If you’re short on time or prefer a hands-off cooking method, you might want to try making instant pot Mexican rice as an alternative. It’s just as flavorful and convenient!
To make this recipe gluten-free (you should use these ingredients instead):
- Use Gluten-free taco seasoning (read the label for any wheat flour or yeast extract; make sure to choose the ones with no gluten ingredients or have a gluten-free label). Or make homemade taco seasoning by combining chili powder, ground cumin, garlic powder, onion powder, crushed red pepper flakes, dried oregano, paprika, smoked paprika, salt, and pepper. - ½ c. salsa
- 8 ounces tomato sauce
- 1 tsp salt
- 1 tsp black pepper

- Cook the ground beef in a large skillet for about 4 - 5 minutes over medium heat until brown, breaking the meat into chunks.
- Once done, drain any excess grease and set the browned beef aside.
- Saute the onions in the same pan for 2 - 3 minutes.
- To the pan, add the ground beef along with the taco seasoning, salt, pepper, and garlic powder. Stir well until everything is blended.
- Then, stir in the tomato sauce, salsa, beef stock, water, and rice.
- Bring everything to a boil on medium heat. Then, add the whole-kernel corn.
- Adjust the heat to low once the mixture is boiling, and let it simmer for 15 - 18 minutes. Stir the rice regularly to ensure the rice isn't sticking.
- About 5 minutes before serving, top everything with cheddar cheese and let it melt.
