These chicken casseroles are not only true comfort food, but they also blend in so well with the hectic daily schedule.
And this French Onion Chicken Bake is excellent for the fall.
However, I just made this on a cool, rainy summer day. And it was exactly what was needed to dispel the melancholy.
The chicken breasts from this recipe turned out perfectly juicy and tender and were topped with caramelized onions. And covered in glorious melted cheese.
This French Onion Chicken Bake is one of my favorite recipes with a taste that is very distinctive and flavorful.
The best part is that this goes well with almost any side dish, including salad, honey-glazed carrots, and oven-roasted red potatoes.
To make French Onion Chicken Bake
These are very simple ingredients that you can easily get your hands on.
- Large Sweet Onions, or just yellow onions
- Butter
- Garlic
- Black Pepper
- Low Sodium Beef Broth
- Balsamic Vinegar
- boneless skinless chicken breasts
- Salt
- Thyme
- Mozzarella Cheese, or light mozzarella (you can try using gruyere cheese if you want)
- Parmesan Cheese
To make this recipe gluten-free (you should use this ingredient instead):
Use gluten-free beef broth such as Swanson Beef Broth 100% Natural Gluten Free. When buying, check the label for any gluten-containing ingredients.
How To Make This French Onion Chicken Bake?
This recipe has become my family’s go-to dinner for those busy weeknights. It’s so wonderful you’d never guess it’s low carb! And unquestionably a comforting and very satisfying meal!
Step 1: Ready a baking dish by spraying it with cooking spray. Prepare the oven and preheat it to 400 degrees.
Step 2: The butter should be added to a large pan that is preheated to medium-high heat.
Step 3: Melt the butter, then add the sliced onions and fry for 5 minutes, stirring regularly.
Step 4: Toss in some garlic, pepper, and thyme, and turn the heat down to medium.

Step 6: When the onions have reached a jammy consistency, about 10 minutes, add the beef stock and balsamic vinegar and stir.

- 2/3 c. Low Sodium Beef Broth
- 2 tablespoons Balsamic Vinegar
Instructions
- Prepare a baking dish by spraying it with cooking spray and heating the oven to 400 degrees.
- Butter a big pan and heat it over medium to medium-high heat.
- Sliced onions should be added to the melted butter and cooked for 5 minutes while stirring occasionally.
- Add the garlic, pepper, and thyme, and lower the heat to medium.
- Continue to cook for a minute more.
- Add the beef stock and balsamic vinegar and simmer, stirring occasionally, for about 10 minutes, or until the onions have become a jam-like consistency.
- Once the onions have caramelized, use a third of the mixture to cover the bottom of a buttered baking dish.
- Spread the onions out on a baking sheet and lay your big chicken breast on top of them.
- Season chicken breasts very gently with your go-to seasoning.
- The last of the onion pieces should be layered above the entire chicken breasts, followed by the mozzarella and parmesan.
- Bake the chicken in the preheated oven for 30 minutes, or until an instant-read thermometer registers 165 degrees F.
