- 1/3 c butter room temperature
- 3/4 c granulated sugar
- 1/2 c applesauce
- 1 tsp vanilla
- 2 eggs
- 2 1/4 c flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1 tsp cinnamon
- 1 c Greek yogurt or sour cream
Glaze:
- 2 c powdered sugar
- 1/3 c milk
- 1 tsp vanilla

- Prepare Filling: Cook diced apples, sugar, cinnamon, cornstarch, and water. In a saucepan until the apples soften. Set aside to cool. Mix brown sugar and cinnamon. In a small bowl.

Made it yesterday to try it out for an upcoming rv group breakfast. Made 1/2 the recipe and used Honey Vanilla Greek yogurt and a partial can of cinnamon fried apples, chopped, from Aldi.
Turned out great, very moist. Really doesn’t need to be heated to serve.
Took a few pieces to elderly neighbors to enjoy also.
I’m pretty sure our rv group will love this recipe.
