Apple Fritter Cake Recipe

This Apple Fritter Cake is like a giant, shareable apple fritter. That’s soft, moist, and packed with sweet, spiced apples. Each layer bursts. With cinnamon flavor. Complemented by the tartness of Granny Smith apples. And the whole thing is drizzled. With a rich vanilla glaze. It’s the perfect cozy breakfast. Or dessert. Ingredients

Filling:

  • 2 c peeled and large diced Granny Smith apples about 2 medium
  • 1/3 c granulated sugar
  • 1/2 tsp cinnamon
  • 2 tbsp cornstarch
  • 2 tsps water
  • 1/2 c dark brown sugar
  • 1/2 tsp cinnamon

Cake:

  • 1/3 c butter room temperature
  • 3/4 c granulated sugar
  • 1/2 c applesauce
  • 1 tsp vanilla
  • 2 eggs
  • 2 1/4 c flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tsp cinnamon
  • 1 c Greek yogurt or sour cream

Glaze:

  • 2 c powdered sugar
  • 1/3 c milk
  • 1 tsp vanilla

Instructions
 

  1. Prepare Filling: Cook diced apples, sugar, cinnamon, cornstarch, and water. In a saucepan until the apples soften. Set aside to cool. Mix brown sugar and cinnamon. In a small bowl.
  2. Make Cake Batter: Cream butter and sugar. Add applesauce, vanilla, and eggs. Mix flour, baking powder, baking soda, salt, and cinnamon. In a separate bowl. Combine wet and dry ingredients. Alternating with Greek yogurt.
  3. Layer Cake: Spread half the batter. In a greased 9×13 pan. Add apple filling. Sprinkle brown sugar mixture. And cover with remaining batter. Top with more brown sugar.
  4. Bake: Bake at 350°F for 35-40 minutes until set.
  5. Add Glaze: Poke holes in the hot cake. Pour glaze over it. And let it soak in. Let it set before serving.

Notes

To make this recipe gluten-free. Simply swap out the all-purpose flour. With a 1:1 gluten-free baking flour. Ensure that the baking powder. And baking soda. Are also gluten-free. As some brands. May contain traces of gluten. You can use gluten-free oats. If you’d like to add a bit of texture. The Greek yogurt. And other ingredients. Are naturally gluten-free. So no need to worry there. The result is just as delicious. With the same moist, tender crumb. And all the cozy apples. And cinnamon flavors you love.
