Steps To Make Salted Nut Roll:
Step 1: For the filling: Start by melting the butter and marshmallow cream together in the microwave for about 30-60 seconds, until the butter is completely melted and the mixture is smooth. In a large mixing bowl, combine this melted goodness with the powdered sugar and vanilla extract. Mix until everything comes together into a creamy, dreamy dough. Place this dough on a piece of parchment paper or a silpat and knead it into a large ball. Divide the ball into six equal parts, then roll each one into a log about 7-8 inches long and 1 inch thick. Wrap each log in parchment paper and pop them in the freezer for about two hours to firm up.
Step 2: For the coating: While your logs are chilling, melt the caramel bits and butter in the microwave for about 1 ½ minutes. Don’t worry if the butter separates from the caramel a bit—that’s normal. Once melted, let the caramel cool slightly, then mix the butter back in using your hands and press the caramel into the bottom of an 11×7-inch baking dish. Score it into six equal portions.
Step 3: Now, take one frozen log and coat it completely with a portion of the caramel, using your hands to spread it evenly. It might feel like you’re working with playdough—embrace the mess! Once coated, roll the log-in chopped peanuts, pressing them in so they stick. Wrap the log back in parchment paper and refrigerate. Repeat for the remaining logs. When you’re ready to enjoy, slice each log into 1-inch pieces and indulge!
Tip:
To make the perfect Salted Nut Rolls. Ensure your hands are slightly damp. When working with the caramel. This prevents the caramel from sticking to your hands. And makes it easier to spread evenly. Over the marshmallow logs. Also, don’t rush the freezing process. Giving the logs enough time to firm up. Ensures they maintain their shape. When you coat them with caramel. And nuts. Lastly, store your finished rolls in an airtight container. In the refrigerator. To keep them fresh. And delicious for longer.
