At our house, the Mexican meal is a favorite! Everyone loves these queso chicken tacos made in a slow cooker. They require just 4 simple ingredients and take no time at all to prepare. Usually once a month, we will prepare these cheesy chicken tacos. The chicken combination is delicious in tacos, but it also works well as a topping for rice, nachos, baked potatoes, or a salad. I am impressed with the versatility of this recipe!
Making Mexican Chicken in a Slow Cooker
The ingredients are pretty simple and also very adaptable:
What you need:
- 2 pounds boneless skinless chicken breasts
- 1 (1 ounce) package of taco seasoning
- 1 (10 ounces) can Rotel diced tomatoes and green chilies
- 1-1/2 c. Mexican cheese dip (refrigerated or jarred)
To make this recipe gluten-free (you should use these ingredients instead):
Gluten-free taco seasoning (check the label for any wheat flour or yeast extract; make sure to pick the ones with no gluten ingredients or has a gluten-free label).

To make homemade taco seasoning combine chili powder, ground cumin, garlic powder, onion powder, crushed red pepper flakes, dried oregano, paprika, smoked paprika, salt, and pepper. You can change the ratio to suit your tastes (if you want more or less spice, heat, or smokiness).
While Rotel diced tomatoes and green chilies are made with no gluten ingredients. You are welcome to make your own by mixing fire-roasted diced tomatoes, diced green chilies, lime juice, and a little bit of fresh cilantro. This equals two cans of diced tomatoes and chilies from the grocery!
Cheese dip is normally gluten-free because it’s just cheese, salsa, and cornstarch. Although, there are store-bought queso or cheese dip thickened with wheat, which is not gluten-free. So, always make it a habit to check the label when buying from the store.
These queso chicken tacos are a cinch to make in the slow cooker. Stir in taco seasoning, Rotel diced tomatoes, and green chiles to cook chicken. Toss the chicken with the queso dip once it has been shredded. That’s all there is to it. Super simple!
Easily turn this into a dip. Simply add more cheese dip to the chicken mixture and serve over nachos or enjoy warm in the crockpot with chips. Incredibly addicting!

Slow Cooker Queso Chicken Tacos Recipe
Ingredients
- 1 10 ounces can Rotel diced tomatoes and green chilies
- 2 lbs boneless skinless chicken breasts
- 1-1/2 c. Mexican cheese dip refrigerated or jarred
- 1 1 ounce package of taco seasoning
Instructions
- In a 6-quart slow cooker, place the chicken and sprinkle it with taco seasoning. On top, add the tomatoes.
- Put the lid on and set it to cook for 4 to 6 hours on low.
- Take the chicken out of the slow cooker. Using two forks, shred the chicken. Then, add the shredded chicken back to the slow cooker. Add the cheese dip and stir well.
- Enjoy this Queso Chicken Taco with tortillas or hard taco shells and your preferred taco toppings!
