3 boxes instant Pistachio pudding mix (3.35 oz. each)

1 box Yellow Cake Mix

1/2 c. Vegetable Oil

1 c. hot water

4 eggs

1/4 c. chopped Pistachios

2 or 3 drops of green food coloring (optional)


Instructions

Preheat your oven to 350°F (175°C). Grease two loaf pans.

In a bowl combine 3 boxes of instant pistachio pudding mix, 1 box of cake mix, 1/2 cup of vegetable oil, 1 cup of hot water and 4 eggs. Mix everything together until the batter is smooth.

If you want a pistachio color you can add around 2 – 3 drops of food coloring to the batter.

For a nutty crunch gently fold in a quarter cup of chopped pistachios into the batter.

Divide the batter evenly. Pour it into the greased loaf pans.

Bake, for 40 to 45 minutes or until a toothpick inserted comes out clean.

Allow the loaves to cool completely in the pans before removing them.

Optional: If you want to enhance the pistachio flavor consider adding a teaspoon of almond extract.

Notes

To make a gluten-free version of this delicious Healthy Pistachio Bread just replace the yellow cake mix with a gluten free yellow cake mix. Make sure that the instant pistachio pudding mix you select is also gluten free. The rest of the recipe stays the same so you can still savor the taste and delightful flavors in a gluten free manner.
