Chicken is a regular on my family’s list of favorites and go-to weeknight meals. I know most people (just like me) also find it hard to always come up with unique weeknight meals. That is why we typically fall back on convenient favorites that our family will eat. We have our favorites, and chicken without any doubt is our number-one go-to. Chicken is like a blank canvas that we can easily dress up to suit our taste.
Crispy Cheddar Chicken
To make Crispy Cheddar Chicken all you need are just super simple ingredients, most of which are pantry staples. Chicken, butter crackers, and cheddar cheese are the three main things required to throw this amazing chicken dinner together. Along with some other incredibly simple ingredients (salt, pepper, dried parsley, and garlic powder) that add dimension and flavor to this incredibly simple dish.
For a simple meal, serve this Crispy Cheddar Chicken with a side dish such as veggies or a salad. Matter of fact, this crispy cheddar chicken pairs well with just about anything!
What You Need To Make This Crispy Cheddar Chicken:
- Boneless skinless chicken tenders or breasts
- Butter crackers, such as Ritz
- Salt
- Black pepper
- Cheddar cheese, grated
- Dried parsley
- Garlic powder
- Milk
- Eggs

- Sour cream
- Butter

- Use gluten-free crackers. There is a lot to choose from, some are more like traditional crackers, but there are others similar to Ritz crackers, like Crunchmaster.
- Use gluten-free cream of chicken soup or make your own.
Steps To Make Crispy Cheddar Chicken
Step 1: In a blender, pulse the crackers along with the cheese and seasonings until crumbly.

Step 3: Into the egg mixture, dredge the chicken, then coat all sides with the dry crumbs.

Step 4: Lay all the breaded chicken on a greased baking dish, pop it in the oven, and bake for about 30 minutes at 400 degrees F.
Step 5: Next, throw together the sauce. Heat and mix the sauce ingredients in a pan on medium-high heat, adding milk by a tablespoon until your preferred consistency.

Ingredients
- 2 pounds of boneless skinless chicken tenders or breasts
- 1 1/2 c. cheddar cheese grated
- 2 sleeves butter crackers such as Ritz
- 1 tsp dried parsley
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs beaten
- 2 tbsp milk
Sauce:
- 2 tbsp butter
- 2 tbsp sour cream
- Milk as needed
- 1 can cream of chicken soup
Instructions
- Prepare the oven and preheat it to 400 degrees F. With nonstick spray, coat a 9 x 13-inch baking dish.
- Slice each breast (if using chicken breasts) into 2 to 3 large pieces.
- Place the crackers, cheese, salt, pepper, garlic powder, and parsley in a food processor. Pulse until you have fine crumbs.
- Mix the eggs and milk in a shallow bowl. In another shallow bowl, add the cracker/cheese mixture.
- In the egg mixture, dredge the pieces of chicken, then coat in the cracker mixture, making sure to press in the crumbs to coat the chicken well.
- In the prepared pan, place the chicken and lightly spray the chicken with cooking spray. Using foil, tent the dish and bake the chicken for about 20 minutes. Uncover and resume baking for another 10 minutes or until the chicken is golden brown and crispy.
- In the meantime, prepare the sauce. Whisk the chicken soup, sour cream, and butter in a medium saucepan on medium-high heat. By tablespoon, add the milk until the sauce reaches your desired consistency.
- Pour the sauce over the chicken right before serving. Enjoy!
