  • 2 pints cherry or grape tomatoes any color – roughly 4 cups total
  • 2 cloves garlic chopped
  • 2 tbsp olive oil
  • 1 tbsp fresh parsley chopped
  • 1 tsp salt
  • Freshly ground black pepper to taste
  • Grated Parmesan cheese for topping optional

Instructions
 

  1. Preheat your oven to 400°F.
  2. In a baking dish (approximately 8x12"). Toss together the tomatoes, olive oil. And freshly ground black pepper.
