Frequently Asked Questions
How should I choose my rice?
In this recipe, I used Jasmine rice. But you are welcome to swap it with basmati rice. Although, I prefer Jasmine rice because it is softer, plumper, and slightly moist.
What type of wine is best?
DO NOT use cooking wine because it is packed with sodium and will make your food way too salty! And I do not suggest using the wine that you usually drink.
I enjoy using Pinot Grigio as it is a delightfully crisp, lemony-lime, dry white wine. You can opt to use cheaper wine.
What if I do not want to use wine?
These are amazing substitutes for wine:
- Chicken or vegetable stock
- White Wine Vinegar
- Or combine 1 tbsp of lemon juice per cup of stock for extra flavor!

Ingredients
- 2 tbsp olive oil
- ½ c. butter (1 stick)
- 1 pound chicken tenders
- ½ tsp garlic powder
- 2 tbsp minced garlic
- 1 tsp salt divided
- 3 c. chicken broth
- ½ c. dry white wine (such as Pinot Grigio)
- 1 ½ c. white rice (uncooked)
- ¼ tsp red pepper flakes
- ½ c. Parmesan cheese (grated or shredded)
- Salt and pepper
Instructions
- In a large skillet, heat the oil on medium heat. Cook the chicken tenders (seasoned with salt and pepper) until browned and completely cooked. Set the chicken tenders aside.
- In the same pan, add the butter. Saute the garlic with pepper flakes and half tsp salt on medium heat until aromatic.
- Adjust the heat to medium-high, then pour in the white wine. Stir and continue to cook for 5 minutes more. Set aside and save 3 tbsp of the pan sauce.
- Into the skillet, add the uncooked rice. Next, the rest of the butter sauce. Stir well, then pour in the chicken broth and add the rest of the half tsp salt. Bring everything to a low boil. Once boiling, adjust the heat to medium-low. Put the lid on and simmer for another 20 minutes until the rice is tender, stirring a few times as it cooks.
- Over the rice, sprinkle the Parmesan, then arrange the chicken on top. Replace the lid and take the pan off the heat. Let this stand for 5 minutes.
- Before serving, drizzle the reserved pan sauce over the chicken tenders. You can garnish with parsley if desired.
