To make Cheesy Chicken Fritters
The ingredients to make these fritters are fairly simple and easy to find.
For the Chicken Fritters:
- Eggs
- 3 large Chicken breasts
- All-purpose flour
- Mayonnaise
- Mozzarella cheese (about 1 1/3 cups, shredded)
- Extra light olive oil (or any high-heat cooking oil)
- Chopped fresh dill
For the Garlic Aioli Dip:
- Mayonnaise
- Garlic clove
- Lemon juice
To make this recipe gluten-free (you should use this ingredient instead):
- Cornstarch or Potato starch in place of all-purpose flour for a gluten-free version.

Step 2: Add the remaining batter ingredients to the mixing bowl. Stir, cover, and chill overnight.
Step 3: Over medium heat, add 2 Tbsp oil to a large non-stick pan. When oil is heated, add chicken mixture a heaping tbsp at a time.
Step 4: Slightly flatten the tops with the back of your spoon and fry uncovered for 3-4 min on the first side, then turn and fry for 3 min on the second side or until the outsides are golden brown and the chicken is thoroughly cooked.
Step 5: If using aioli, mix all ingredients in a small dish or measuring cup until smooth.

Ingredients
Chicken Fritters:
2 large eggs
1 1/2 pounds chicken breasts, (3 large)
1/3 c. mayonnaise
4 ounces mozzarella cheese, (1 1/3 c. shredded)
1/3 c. all-purpose flour
1 1/2 tablespoons chopped fresh dill
2 tablespoons Extra light olive oil, to saute (or any high-heat cooking oil)
1/2 teaspoon salt, or to taste
1/8 teaspoon black pepper
Garlic Aioli Dip (Optional):
1 garlic clove, pressed
1/2 tablespoon lemon juice
1/3 c. mayonnaise
1/8 teaspoon black pepper
1/4 teaspoon salt
Instructions
In a large mixing bowl, cube the chicken into about half-inch pieces using a sharp knife. A helpful hint is to partly freeze the chicken breasts before slicing them.
Other batter ingredients should be added to the mixing bowl: Two eggs, a third of a cup of mayonnaise, a third of a cup of flour, one and a third cups of shredded mozzarella, one and a half tablespoons of dill, half a teaspoon of salt, and an eighth of a teaspoon of black pepper, to taste. Give everything a quick stir. Tent with plastic and chill for at least two hours, preferably overnight.
Put 2 tablespoons of oil into a big, nonstick pan and heat it over medium heat. When the oil is ready, carefully drop in a heaping tablespoon of the chicken mixture. Using the back of a spoon, gently press down on the tops, then sauté, uncovered, for three to four minutes, until the bottoms are golden and the chicken is completely cooked. Add more oil as needed. Do the same with the rest of the fritters.
To prepare the aioli, just mix all the ingredients in a small dish or liquid measuring cup until smooth.
Notes
Slice a fritter in half to check for doneness; the meat inside should be totally white. Reduce the heat if the chicken patty browns too quickly.

Cornstarch or potato starch is a great sub for all-purpose flour to make the recipe gluten-free.
