Have you ever made something, taken one bite, and immediately realized you should’ve doubled the recipe? That was me with these Caramel Apple Cheesecake Bars.

I made them for a cozy fall gathering—just a little casual get-together with friends where I thought I’d have plenty of leftovers. Wrong. These bars vanished within minutes, and people were literally hovering over the pan, forks in hand, ready to grab another piece before they were gone.

I had planned to save a few bars for my own post-party snack (rookie mistake), but the second I turned around, my husband had snagged the last one. The audacity! Now, making these has become a non-negotiable every fall. And trust me, once you try them, they’ll be a must-bake in your house, too.

Why You’ll Love This Caramel Apple Cheesecake Bars Recipe?

  • They combine the best of everything. It’s like apple crisp, cheesecake, and a buttery shortbread bar all rolled into one.
  • The flavors are pure fall magic. Tart apples, warm cinnamon, creamy cheesecake, and golden caramel—does it get any better?
  • No complicated cheesecake steps. No water baths, no cracking worries—just mix, layer, and bake.
  • They’re even better the next day. The flavors meld together overnight, making them dangerously good by day two.
  • They’ll impress literally everyone. Take these to a potluck, and watch people fight over the last square.

Ingredient Notes:

Each layer in these bars is essential. No weak links here.

1. The Buttery Shortbread Crust

  • Flour + Butter + Brown Sugar = A simple but ridiculously good base that holds everything together.

2. The Creamy Cheesecake Layer

  • Cream Cheese & Sugar – The foundation of a smooth, tangy filling.
  • Eggs – They help set the cheesecake, so it’s creamy but sliceable.
  • Vanilla Extract – That little extra warmth and flavor booster.

3. The Cinnamon-Spiced Apple Layer

  • Granny Smith Apples – Tart and firm, so they don’t get mushy when baked.
  • Cinnamon & Nutmeg – The cozy factor. These two bring the warm, spiced flavor that screams fall.
  • A Little Sugar – Helps caramelize the apples just the right amount.

4. The Oat Streusel Topping

  • Brown Sugar + Butter + Oats – The holy grail of crispy, buttery toppings.
  • Flour – Helps it clump into those perfect little streusel bits.

5. The Caramel Drizzle

  • Because it makes everything better. And yes, you should totally be generous with it.

How To Make Caramel Apple Cheesecake Bars?

Step 1: Prep the Oven & Pan

Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper. (Do not skip this—you’ll want easy removal later.)

Step 2: Make the Shortbread Crust

In a bowl, mix flour, brown sugar, and softened butter until crumbly. Press into the baking pan and bake for 15 minutes, or until lightly golden.

Step 3: Make the Cheesecake Filling

Beat cream cheese and sugar until smooth. Add eggs, one at a time, then stir in vanilla extract. Pour the cheesecake mixture over the warm crust.

Step 4: Toss the Apples in Spices

In another bowl, mix chopped apples, sugar, cinnamon, and nutmeg. Spread them evenly over the cheesecake layer.

Step 5: Make the Streusel Topping

Combine brown sugar, oats, flour, and softened butter in a bowl. Mix until crumbly, then sprinkle over the apple layer.

Step 6: Bake & Cool

Bake for 40-45 minutes, or until the cheesecake is set and the topping is golden. Let the bars cool completely, then drizzle with caramel sauce. Refrigerate for a few hours before slicing—it makes cutting them way easier.

Storage Options:

  • Fridge: Store in an airtight container for up to 5 days.
  • Freezer: Freeze without the caramel drizzle for up to 3 months. Thaw overnight in the fridge.

Serving Tip: These bars taste best chilled, but if you want to take them up a notch, microwave them for a few seconds before eating.

Variations and Substitutions:

  • Try a different apple. Honeycrisp or Pink Lady will make them sweeter, while Granny Smith keeps them tart.
  • Add nuts to the streusel. Chopped pecans or walnuts bring in an extra crunch.
  • Swap the caramel for a maple drizzle. Perfect for those who love a hint of maple flavor.
  • Add a touch of bourbon to the apples. Because caramel, apples, and bourbon? Yes, please.

What to Serve with Caramel Apple Cheesecake Bars?

While these bars are perfect on their own, here’s how to make them even better:

  • Vanilla Ice Cream – That warm-cold contrast? Unreal.
  • Whipped Cream – A fluffy, creamy addition that makes everything feel extra indulgent.
  • Spiced Cider or Coffee – The coziest pairing imaginable.

Frequently Asked Questions:

Can I make these ahead of time?
Yes! In fact, they taste better the next day after chilling overnight.

Do I have to use Granny Smith apples?
Nope! But they keep the bars from being too sweet.

Can I use store-bought caramel?
Of course! But if you have time to make homemade caramel, go for it.
