Ingredients

1/3 c light brown sugar

2 tsp ground cinnamon

2 large apples, peeled, cored, and diced

2/3 c white sugar

1/2 c unsalted butter, softened

2 eggs, room temperature

1 1/2 tsp vanilla extract

1 1/2 c all-purpose flour

1 3/4 tsp baking powder

1/2 c milk

For the Glaze:

1/2 c powdered sugar

23 tbsp milk or cream


Instructions

Preheat the oven to 350°F. Prepare a 9×5 inch loaf pan by greasing it or lining it with parchment paper.

In a bowl mix together 1/3 cup of sugar and 1 teaspoon of cinnamon. Add apples, toss them until coated and set aside.

In another bowl cream together 2/3 cup of sugar and 1/2 cup of softened butter until fluffy. Beat in the eggs one, at a time then stir in the vanilla extract.

Combine 1 1/2 cups of flour and 1 3/4 teaspoon of baking powder by sifting them.

Gradually add the dry ingredients to the butter mixture alternating with 1/2 cup of milk. Mix until just combined.

Pour half of the batter into the pan. Layer half of the apple mixture on top then pour in the remaining batter. Finish by placing the rest of the apples on top.

Bake for 50 to 60 minutes or until a toothpick inserted comes out clean.

Allow the bread to cool for 15 minutes.

To make the glaze whisk together 1/2 cup powdered sugar, with 2 to 3 tablespoons of milk or cream until smooth. Drizzle this over the bread.
