Air Fryer Brussel Sprouts With Bacon


Description

These easy air fryer brussel sprouts with bacon are super simple and super delicious – because honestly, bacon makes everything better, right? If you don’t have an air fryer in your life, you need one. This is the one I’ve been using for three years and recommend it over and over again!


Ingredients

Scale
  • 1 pound of brussels sprouts, halved
  • 2 sweet potatoes, diced
  • 1/2 pound bacon (I use Whole30 compliant)
  • 1 tbs olive oil
  • Salt and pepper to taste
  • Veggie seasoning to taste

*You can save on calories and fat grams if you opt for cooking spray instead of olive oil


Instructions

  • Combine all ingredients except the bacon in a bowl until well mixed
  • Throw into air fryer (spray air fryer with cooking spray first)
  • Cook at 380 for 25 minutes or until edges are dark
  • Cut your uncooked bacon into smaller pieces, and add to the air fryer for the last 10 minutes

Notes

Leftovers Hack: This made about 2 servings, so the next morning I made two scrambled eggs and added in a couple scoops of this meal. It was absolutely delicious and fueled my breakfasts for the next couple mornings! Top with buffalo sauce or eat plain!
