One of the best things I’ve ever spent my hard-earned money on has to be hands down without a doubt my air fryer. I use this sucker every single day, and the options are literally endless. I’ve made chicken wings, chicken breast, chicken thighs, chopped sweet potatoes, veggies, chicken nuggets, corn dogs, and my latest experiment: brussels sprouts.
Needless to say, I use my air fryer for just about everything – so much so that I’ve actually considered buying a second one just because I love having it so much. And, I could cook even more volume at one time if I had a second. I’m totally for this idea.
So about this whole Brussels sprouts thing. I’m all for eating veggies. I even recommend eating something green at as many meals as possible (I talk more about that here).
Green veggies are full of essential vitamins and nutrients, and they can even help with weight loss. There is one green veggie, however, that I’ve never been able to stomach. That, my friends, is the brussels sprout.
I have tried for years to make myself like this vegetable, and have tried cooking it in so many ways. But it just doesn’t happen. I can’t stand them.
But I’m completely torn because I get that they’re so dang good for you, so I feel like I should be trying a little harder to add these into my diet every now and then.
I decided recently to give these greens another go. I purchased a bag of pre-sliced Brussels sprouts from my local grocery store and started contemplating ways I could cook these bad boys up. Naturally, throwing them in the air fryer made the most sense, right? Because #easy.

I was skeptical about the results, but in all honesty – they were pretty good. I won’t say that Brussels sprouts are all of a sudden my favorite veggie, but I really did like the flavor this time and couldn’t complain about the texture after I experimented with this air fryer recipe.
I even purchased more ingredients yesterday at the grocery store to make this meal again this week, so you can say it’s a keeper!

These easy air fryer brussel sprouts with bacon are super simple and super delicious – because honestly, bacon makes everything better, right? If you don’t have an air fryer in your life, you need one. This is the one I’ve been using for three years and recommend it over and over again!
Ingredients
- 1 pound of brussels sprouts, halved
- 2 sweet potatoes, diced
- 1/2 pound bacon (I use Whole30 compliant)
- 1 tbs olive oil
- Salt and pepper to taste
- Veggie seasoning to taste
*You can save on calories and fat grams if you opt for cooking spray instead of olive oil
Instructions
- Combine all ingredients except the bacon in a bowl until well mixed
- Throw into air fryer (spray air fryer with cooking spray first)
- Cook at 380 for 25 minutes or until edges are dark
- Cut your uncooked bacon into smaller pieces, and add to the air fryer for the last 10 minutes

Leftovers Hack: This made about 2 servings, so the next morning I made two scrambled eggs and added in a couple scoops of this meal. It was absolutely delicious and fueled my breakfasts for the next couple mornings! Top with buffalo sauce or eat plain!
