And a hint of heat from cayenne pepper. It’s the perfect balance of flavors. The slivered almonds. Add just the right amount of crunch. While the fresh green onions. Give it a gentle bite. Ingredients

  • 20 ounces can pineapple tidbits with juice reserved
  • 14 ounces bag of coleslaw mix
  • ¼ c slivered almonds
  • 4 green onions finely chopped

Dressing:

  • c mayonnaise
  • Juice of 1 lime
  • 3 tbsp apple cider vinegar
  • 3 tbsp reserved pineapple juice
  • 3 tbsp brown sugar
  • ½ tsp cayenne pepper
  • Salt and pepper to taste

Instructions
 

  1. Make the Dressing: In a small mixing bowl. Whisk together the mayo, lime juice, apple cider vinegar, reserved pineapple juice, brown sugar, cayenne pepper. And a pinch of salt. And pepper. Keep whisking until it’s smooth. And creamy. Taste. And adjust the seasoning if needed—if you like a little more tang. Add a bit more vinegar. Or if you want extra sweetness. Throw in more brown sugar.
  2. Prepare the Salad: In a large bowl. Add the coleslaw mix, pineapple tidbits (make sure. They’re drained well!), and diced green onions. The fresh, crisp ingredients. Will combine beautifully. With the sweetness of the pineapple.
  3. Toss and Combine: Pour the prepared dressing. Over the coleslaw mix. And pineapple. Tossing everything together. Until evenly coated. Make sure every bite. Gets a bit of that tangy, sweet dressing.
