Ingredients

For the Cauliflower:

  • 1 large head of white cauliflower trimmed
  • 5 garlic cloves crushed
  • 1/2 c thinly sliced red onion
  • 1/2 c olive oil with a little extra for drizzling
  • 1 tbsp ground fennel seeds
  • 1 tbsp sweet paprika
  • 1/2 tsp ground cinnamon

For the Grapes:

  • 1 pound whole red grapes
  • 3 sprigs of fresh thyme
  • 2 tsp balsamic vinegar
  • 1 tbsp olive oil
  • Kosher salt and freshly cracked black pepper to taste

Instructions
 

  1. Preheat your oven to 450°F. And line two half-sheet baking trays.
  2. Grind the fennel seeds, cinnamon, and paprika. Using a spice grinder. Or mortar and pestle.
  3. In a large bowl. Toss the cauliflower, garlic, onion, olive oil. Spices, salt, and pepper. Until well-coated.
  4. Spread the cauliflower mixture. Onto one of the prepared trays. And roast for 18-22 minutes. Or until the edges. Start to char.
  5. Reduce the oven temperature to 400°F. In a bowl. Toss the grapes. With olive oil, balsamic vinegar. Thyme, salt, and pepper. Then spread them. On the second baking sheet. Roast for 15-18 minutes. Until soft. But still holding their shape. Let them cool slightly.
