Ingredients

  • 1 10.5-ounces can cream of chicken soup (can use 98% fat free)
  • c chicken broth
  • c uncooked instant white rice
  • ¼ c grated Parmesan cheese green can or fresh
  • Dash freshly ground black pepper

Instructions
 

  1. Heat the chicken soup and broth in a saucepan until it comes to a boil, over medium-high heat.
  2. Add the rice, Parmesan cheese and black pepper while stirring.
  3. Cover the saucepan. Take it off the heat.
  4. Allow it to sit for 5 to 8 minutes until the rice is cooked and most of the liquid is absorbed.

Notes

If you're, on a gluten-free diet you can still enjoy Souper Rice as a delightful treat! Just choose a gluten-free cream of chicken soup, which you can find in health food sections or specialty stores. Also, remember to check your chicken broth for any sources of gluten or thickeners.
