Mediterranean Spinach and Feta Casserole Recipe

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1/2 cup sweet onion finely diced
  • 1 red bell pepper diced (approximately 1 cup)
  • 16 ounces fresh spinach washed and dried
  • 1/2 cup feta cheese crumbled
  • 2 cups low-fat cottage cheese
  • 1/3 cup grated Parmesan cheese
  • 1 cup heavy whipping cream
  • 4 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon turmeric
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon Mediterranean seasoning
  • Non-stick cooking spray for greasing the baking dish

Instructions
 

Preheat Oven:

  1. Preheat the oven to 350°F (175°C). Lightly grease a 13x9-inch casserole dish with non-stick cooking spray and set aside.

Cook Aromatics:

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper. Sauté for approximately 3 minutes, or until the vegetables begin to soften.

Add Spinach:

  1. Incorporate the fresh spinach into the skillet. Stir gently and cook for an additional 2 minutes, or until the spinach is fully wilted. Remove from heat and allow the mixture to cool slightly.

Prepare Cheese Mixture:

  1. In a large mixing bowl, combine the crumbled feta cheese, cottage cheese, grated Parmesan, heavy cream, eggs, garlic powder, paprika, turmeric, nutmeg, and Mediterranean seasoning. Stir thoroughly until well incorporated.

Combine Vegetables and Cheese Base:

  1. Add the cooled spinach mixture to the cheese and egg base. Stir until all ingredients are evenly mixed.

Transfer to Baking Dish:

  1. Pour the prepared mixture into the greased casserole dish. Use a spatula to spread it evenly across the surface.

Bake:

  1. Place the dish in the preheated oven and bake for 40–45 minutes, or until the casserole is set and the top is golden brown. A knife inserted into the center should come out clean.

Cool and Serve:

  1. Allow the casserole to rest for approximately 10 minutes before slicing and serving. This will help the casserole set fully and make serving easier.

Notes

This recipe is naturally gluten-free, as it contains no flour or crust. To ensure the dish remains gluten-free, double-check that the Mediterranean seasoning and other pre-packaged ingredients (e.g., feta cheese or cottage cheese) do not contain any hidden gluten additives or preservatives.
