Mediterranean Falafel Bowls

A fast and fresh Mediterranean Falafel Bowl made with crispy falafel, tomatoes, cucumber, feta, pita, hummus, and lemon. A simple, vibrant meal perfect for busy days and quick dinners.

Ingredients

  • 2 frozen falafel burgers any preferred brand
  • 1/2 cup cherry or grape tomatoes halved
  • 1/2 cucumber quartered lengthwise and sliced
  • 3 tablespoons crumbled feta cheese
  • 1 pita toasted and cut into triangles
  • 1/4 cup hummus
  • 1 teaspoon fresh lemon juice
  • Optional: Paprika; torn fresh mint, cilantro, or parsley for garnish

Instructions
 

Cook the Falafel

  1. Prepare the frozen falafel burgers according to the package instructions. When using a stovetop method, cook each side for approximately four minutes or until crisp and heated through.

Prepare the Vegetables

  1. While the falafel cooks, slice the tomatoes in half. Quarter the cucumber lengthwise and slice it crosswise into small pieces.

Toast the Pita

  1. Warm the pita in a toaster or skillet until lightly crisp. Cut into triangles for serving.

Assemble the Bowl

  1. Arrange the tomatoes, cucumber, pita triangles, and crumbled falafel in a serving bowl. Add the feta cheese and a spoonful of hummus.

Finish and Serve

  1. Drizzle with fresh lemon juice and sprinkle with paprika. Garnish with fresh herbs if desired. Serve immediately.

Notes

To make this recipe fully gluten-free:
  • Select gluten-free falafel or verify the frozen brand uses no wheat or gluten-containing binders.
  • Replace the pita with gluten-free pita, gluten-free flatbread, or omit it entirely.
  • Confirm that the hummus used is certified gluten-free (most varieties are naturally gluten-free, but some may be processed in facilities with cross-contamination).
