Ingredients

  • 3 large chicken breasts boneless and skinless, sliced lengthwise into thin cutlets
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 6 tbsp 50g all-purpose flour
  • 2 tbsp 30ml olive oil
  • 2 tbsp 28g unsalted butter
  • 3 cloves garlic minced
  • 1 c 240ml chicken stock
  • 1 c 240ml heavy cream (double cream in the UK)
  • ½ c 43g parmesan cheese, grated
  • 1 tsp chili flakes
  • ¼ tsp oregano
  • ¼ tsp thyme
  • c (sun-dried tomatoes chopped
  • 1 tbsp fresh basil leaves

Instructions
 

  1. Season the chicken with salt and pepper. Dredge in flour. Shaking off the excess.
  2. In a skillet. Heat olive oil and butter. Over medium heat. Brown the chicken on both sides. About 4-5 minutes each. Then set aside.
  3. In the same skillet. Sauté garlic. Until fragrant. Add chicken stock. And scrape the pan. To loosen any bits.
  4. Lower heat to medium-low. Add heavy cream and parmesan cheese. Stir until the sauce thickens slightly. Season with chili flakes. Oregano, and thyme.
  5. Return chicken to the skillet. Adding sun-dried tomatoes. Simmer until the chicken is cooked through. And the sauce has thickened.
  6. Garnish with fresh basil. And serve over pasta or rice.
