Fried Potatoes Onions and Smoked Polish Sausage

Ingredients

  • 1 lb. sliced smoked Polish sausage
  • 1.5 lb. russet potatoes cut into 1/2-inch cubes
  • 1/2 tsp seasoned salt
  • 2 tbsp. olive or canola oil
  • 1/2 tsp Italian seasoning
  • 1/2 green bell pepper diced
  • 1/2 red bell pepper diced
  • 1 small yellow onion finely diced
  • Black pepper to taste
  • Shredded parmesan cheese for garnish

Instructions
 

  1. In a skillet melt a chunk of butter. Then sauté the chopped onion until it becomes translucent. Keep it aside.
  2. In the skillet add one tablespoon of butter and one tablespoon of oil allowing them to melt together.
  3. Add russet potatoes, chopped bell peppers, salt, black pepper and Italian seasoning. Mix everything together.
  4. Cover the skillet. Let it cook for 15 minutes until the potatoes become tender.
  5. Include sliced smoked sausage. Cook it for an additional 10 minutes until it turns nicely browned.
  6. Add back the onions. Cook everything for another 5 minutes.
  7. Serve with a sprinkle of parmesan cheese, on top. Enjoy your meal!
