Copycat Starbucks Egg Bites

Ingredients

  • 9 large eggs
  • 1 and 1/2 cups cottage cheese
  • 1 teaspoon salt
  • 6 strips cooked bacon
  • 2/3 cup shredded gruyere cheese

Instructions
 

  1. First, preheat your oven to 350°F. Make sure to grease a muffin tin. Cook 6 strips of bacon. Cut each one in half.
  2. Next in a blender combine 9 eggs, 1 and 1/2 cups of cottage cheese and 1 teaspoon of salt until the mixture is smooth.
  3. Now place half a strip of bacon in each slot of the muffin tin. Add 2/3 cup of shredded gruyere cheese. Pour the egg mixture evenly into each slot.
  4. To create a steam bath effect place a baking sheet filled with boiling water on the rack of your oven. Carefully put the muffin tin on the rack.
  5. Bake everything for 25 minutes. Once they are done baking allow them to cool slightly before removing the egg bites, from the tin. Now you can enjoy your breakfast inspired by Starbucks!
