  • ¼ c unsalted butter
  • ½ c finely diced onions yellow or white
  • 1 c shredded carrots I used matchstick carrots, cut into ½-inch pieces
  • 2 ½ to 3 c small-chopped broccoli florets
  • 1 ½ c chicken stock
  • 1 c milk I prefer skim or fat-free
  • 1 c heavy cream
  • ¼ c all-purpose flour
  • 1 ½ tsp kosher salt
  • ½ tsp ground black pepper
  • A pinch of crushed red pepper flakes or to taste
  • 2 c grated cheddar cheese

Instructions
 

  1. Heat a large pot. Over medium-high heat. And melt the butter. Toss in the onions, carrots, and broccoli. Cooking them until they begin to soften. Which should take about 5 minutes. But this can vary. Based on how small you've chopped your vegetables.
  2. Gradually pour in the chicken broth, milk, and cream. Evenly sprinkle the flour. Over the mixture. Then season with salt and black pepper. And a pinch of red pepper flakes. Continue to stir. And heat the mixture. Over medium heat. Until it starts to thicken. Which should take approximately 10-15 minutes.
  3. When the soup has thickened. Blend in the cheddar cheese. Stirring continuously until the cheese is completely melted. And the soup is smooth. Serve the soup warm. And savor its creamy goodness!
