Ingredients

  • 1 9-inch pie crust
  • 1 c granulated sugar
  • 1 c light corn syrup
  • 1/2 c 1 stick butter
  • 4 large eggs beaten
  • 1/4 c bourbon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 6 oz semi-sweet chocolate chips
  • 1 c chopped pecans

Instructions
 

  1. Preheat your oven to 325°F. Take a pie plate and line it with the pie crust.

For the Filling:

  1. In a saucepan combine 1 cup of granulated sugar, 1 cup of corn syrup and 1/2 cup of butter. Heat it over medium heat while stirring until the butter melts and the sugar dissolves. Let it cool slightly.
  2. In a bowl whisk together 4 beaten eggs, 1/4 cup of bourbon, 1 teaspoon of vanilla extract and 1/4 teaspoon of salt.
  3. Gradually incorporate the cooled sugar mixture into the egg mixture while stirring continuously.
  4. Add in 6 ounces of chocolate chips and 1 cup of chopped pecans. Mix everything well.
  5. Pour this filling, into the pie crust. Bake for 50 55 minutes until it sets.
  6. Enjoy this pie warm. Let it cool down and serve chilled.
