Easy and delicious Cake Mix Cookie Bars made with yellow cake mix, vegetable oil, eggs, vanilla, and chocolate chips. A quick and simple dessert perfect for any occasion.

Ingredients

  • 1 15.25-ounce package yellow cake mix
  • cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cups semi-sweet chocolate chips

Instructions
 

Preparation:

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly coat with nonstick cooking spray. Set aside.

Mixing the Batter:

  1. In a large mixing bowl, combine the yellow cake mix, vegetable oil, eggs, and vanilla extract. Stir until the mixture is fully incorporated and smooth. Please note that the batter will be thick.

Adding the Chocolate Chips:

  1. Gently fold the semi-sweet chocolate chips into the batter, ensuring they are evenly distributed throughout.

Assembling:

  1. Transfer the batter to the prepared baking pan. Use a spatula or clean hands to spread and press the batter evenly to the edges of the pan.

Baking:

  1. Place the pan in the preheated oven and bake for 20 to 25 minutes, or until the edges are lightly golden brown and the center appears slightly underbaked.

Cooling and Serving:

  1. Remove from the oven and allow the cookie bars to cool completely in the pan. Once cooled, lift the bars out of the pan using the parchment paper, slice into squares, and serve.

Notes

To prepare this recipe gluten-free, substitute the yellow cake mix with a certified gluten-free yellow cake mix of your choice. Ensure that all other ingredients, particularly the chocolate chips and vanilla extract, are verified gluten-free to avoid cross-contamination.
