For the Chicken & Gravy:

  • 3-4 cups shredded rotisserie or roasted chicken
  • 4 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 ½ cups chicken broth
  • ¼ cup heavy cream or half & half
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon poultry seasoning optional, for depth of flavor

For the Waffles:

  • 1 large egg separated
  • 1 cup milk
  • 4 tablespoons unsalted butter melted
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon granulated sugar
  • ¼ teaspoon salt

Instructions
 

Prepare the Chicken & Gravy

  1. Shred the chicken and set it aside. If needed, keep it warm in an oven set to 250°F (120°C) while preparing the gravy.
  2. In a medium saucepan over medium heat, melt the butter. Gradually whisk in the flour and cook for approximately 2 minutes, stirring constantly, until the mixture turns golden brown.
  3. Slowly pour in the chicken broth, whisking continuously to prevent lumps. Allow the mixture to simmer for a few minutes until it thickens.
  4. Stir in the heavy cream, salt, black pepper, and poultry seasoning (if using). Continue to cook for an additional 5 minutes until the gravy reaches a smooth and creamy consistency.
  5. Add the shredded chicken to the saucepan, stir well to combine, and keep warm over low heat while preparing the waffles.

Prepare the Waffle Batter

  1. Preheat the waffle iron and lightly grease it with cooking spray or butter to prevent sticking.
  2. Separate the egg white and yolk. Using an electric mixer or whisk, beat the egg white until soft peaks form. Set aside.
  3. In a large mixing bowl, whisk together the egg yolk, milk, melted butter, flour, baking powder, sugar, and salt until combined.
  4. Gently fold in the beaten egg white, ensuring the batter remains light and airy.

Cook the Waffles

  1. Pour the prepared batter into the preheated waffle iron, following the manufacturer's instructions for quantity.
  2. Cook the waffles until golden brown and crisp, typically 3-5 minutes.
  3. Transfer the cooked waffles to a plate and keep warm while assembling the dish.

Assemble and Serve

  1. Place a warm waffle onto a serving plate.
  2. Generously top the waffle with shredded chicken and gravy.
