Ingredients

2 cucumbers, peeled and sliced

1 red onion, thinly sliced into rings

½ pint of cherry tomatoes, halved

⅓ cup white vinegar

¼ cup oil

⅔ cup water

3 tablespoons granulated sugar (or honey for a twist)

Salt and pepper, to taste


Instructions

Cut the cherry tomatoes in half.

Slice the onion into rings.

Slice the cucumbers. You can quarter them if you prefer.

In a bowl mix together water, vinegar and oil.

Add salt and pepper according to your taste.

Pour the liquid over the vegetables.

Gently toss everything together.

Place it in the refrigerator, for an hour to chill.
