Ingredients
1 and a half cups of cranberries, fresh or frozen, thawed and rinsed
Half a cup of vegetable oil
Half a teaspoon of vanilla extract
2 teaspoons of orange zest
1 and a half cups, plus 1 tablespoon of flour
2 teaspoons of baking powder
Half a teaspoon of salt
1 cup of plain yogurt
3 large eggs
1 cup of sugar
Orange Syrup:
One-third cup of granulated sugar
One-third cup of fresh orange juice
Orange Glaze:
1 cup of powdered sugar
2 to 3 tablespoons of orange juice
Instructions
Preheat your oven to 350°F (175°C). Flour the sides and bottom of a loaf pan so that the bread comes out easily.
In a bowl mix together the yogurt, eggs, vanilla extract, vegetable oil orange zest and sugar until everything is well combined.
Gradually add the flour baking powder and salt to the mixture. Gently stir until mixed creating a batter.
Spread the batter evenly into the prepared loaf pan.
Bake the bread, in the preheated oven for around 50 to 55 minutes. To check if it’s done insert a toothpick into the center – if it comes out clean then your bread is fully baked.
Once baked allow the bread to cool in the pan for 10 minutes before transferring it onto a baking sheet placed on top of a cooling rack.
While waiting for the bread to cool down prepare an orange syrup. In a saucepan over low heat combine granulated sugar and fresh orange juice. Cook until all sugar is dissolved completely.
Using a toothpick or skewer make holes, over the top and sides of your bread.
Evenly. Drizzle the orange syrup onto the surface of your bread letting it soak in and infuse all those flavors. After you’ve taken the bread out of the oven it’s important to let it cool completely on the rack. This will help the flavors come together nicely.
To make the orange glaze mix sugar with a small amount of orange juice until you reach your desired consistency.
Drizzle the glaze, over the bread letting it flow down the sides in a way.
Give the glaze 15 minutes to set before you start slicing the bread.
