1 (15.25-oz) can whole kernel corn, drained

1 (14.75-oz) can creamed-style corn

1 (8-oz) box corn muffin mix

1 c sour cream

1/2 c butter, melted

1 to 1 ½ c cheddar, shredded


Instructions

Set your temperature to 350°F (175°C).

Apply a layer of nonstick cooking spray to a baking dish measuring 9×13 inches.

In a bowl thoroughly mix together the whole kernel corn, creamed corn, dry corn muffin mix, sour cream and melted butter.

Pour the mixture into the baking dish. Bake, for 45 minutes. Until the top achieves a golden brown color.

Take out the baking dish from the oven sprinkle cheddar cheese on top of it and return it to bake for 5 to 10 minutes until the cheese has melted.

Let it cool for around 5 to 10 minutes before serving it.

Notes

Yum! The trick here is to use a corn muffin mix. You can easily find it in grocery stores. It works great as the regular mix so you’ll still get that delicious golden crust without any gluten worries. Also make sure to check that the canned corn and creamed corn you use are labeled as gluten-free since some brands might have gluten-containing additives.
