3 lb of Yukon Gold, Russet, or Red Potatoes, peeled and cut into bite-sized cubes

1 c of high-quality mayonnaise (preferably Duke’s brand)

2 tbsp of yellow mustard

2 tsp of apple cider vinegar

¼ c of sweet pickle relish

4 hard-boiled eggs, peeled and chopped

2 ribs of celery, finely chopped

c of green onions, finely chopped

Kosher salt, adjusted to taste

Freshly ground black pepper, adjusted to taste

Paprika, for garnishing


Instructions

Prepare the Potatoes: Start by placing potatoes in a pot and covering them with cold water. Bring it to a boil, over medium-high heat. Let it cook for about 10 to 15 minutes. Until they are soft. Drain the water. Allow the potatoes to cool down a bit.

Prepare the Dressing: In a bowl combine mayonnaise, mustard, and apple cider vinegar until you get a smooth mixture.

Mix Everything Together: Add pickle relish, chopped eggs, celery, green onions, and cooked potatoes to the bowl with the dressing. Gently stir everything together until all ingredients are well coated.

Season, with Salt and Pepper according to your taste.

Present and Serve: Transfer the salad to a serving dish. Sprinkle some paprika on top for a touch of color and flavor.
