Ingredients

1/2 c (1 stick) butter, at room temperature

3/4 c granulated sugar

1/4 c packed brown sugar

1 c creamy or crunchy peanut butter (your choice!)

1 large egg

1 tsp vanilla extract

1 1/2 c all-purpose flour, spooned and leveled

1 tsp baking soda

1/4 tsp kosher salt

1/2 c seedless jelly

Additional jelly for topping

Melted peanut butter, for drizzling

Chopped peanuts, for garnish


Instructions

Preheat the oven to 350Β°F (177Β°C). Prepare your baking pans. By lining them with parchment paper or silicone mats.

In a mixing bowl. Beat the butter until it is smooth. Then add both sugars. Continue beating until the mixture is fluffy.

Mix in the peanut butter. Until it is fully incorporated. Then add the egg and vanilla. Stir until the mixture is smooth.

Add the flour on top of the wet ingredients without mixing. Followed by sprinkling the baking soda and salt over the flour. Gently stir these ingredients with a spoon. Before combining everything until just mixed. Be careful not to overmix.

Shape the dough into balls that are 1 1/2 inches in size. And place them on your prepared baking sheets. Making sure to leave some space between each cookie.

Using a fork dipped in sugar. Gently press down on each dough ball to flatten slightly. And create a crisscross pattern. Then place an amount of jam in the center of each cookie.

Bake in your preheated oven for 13 to 15 minutes. Until the edges turn slightly golden brown.

Allow the cookies to cool on the baking sheet for 5 to 10 minutes. Then move them to a cooling rack. To cool down completely.

Optional decoration: Drizzle with melted peanut butter. And sprinkle with chopped peanuts for an added touch.
