  • 1 large shallot chopped (about 1/2 c)
  • 4 garlic cloves finely chopped
  • 1 red pepper chopped (about 1 c)

  • 3 c reduced sodium chicken stock
  • 1 28 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 4 lasagna noodles broken into small pieces (do not use no-boil noodles)
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 1/2 c ricotta cheese
  • 1/2 c shredded Parmesan cheese
  • 1/2 c shredded mozzarella cheese

Instructions
 

  1. Start by browning half a pound of sausage in a pot making sure to break it into smaller pieces as it cooks.
  2. Next, add one chopped shallot, four cloves of chopped garlic and one chopped red pepper. Sauté everything together, for 4 to 5 minutes.
  3. Now stir in two teaspoons of a herb blend, three cups of reduced-sodium chicken stock, one can (28 ounces) of tomatoes, one can (8 ounces) of tomato sauce, four broken lasagna noodles, one teaspoon of kosher salt and half a teaspoon of pepper.
  4. Once everything is combined well bring the mixture to a boil. Then let it simmer for 20 minutes. During the 5 minutes of simmering time cover the pot.
  5. To serve this delicious One Pot Hearty Lasagna Soup in bowls; add half a cup each of ricotta cheese shredded Parmesan cheese and shredded mozzarella cheese on top.
