This is the best chicken dish you’ll ever make! Moist, tender, and packed with flavor melt-in-your-mouth chicken that you can easily and quickly make at home.
1 c. mayonnaise (or Greek yogurt for a healthier option)
4 boneless, skinless chicken breasts trimmed of excess fat
1 c. Parmesan cheese – divided (or sharp Cheddar, or Asiago)
1 teaspoon garlic powder
1 teaspoon seasoning salt
1/2 teaspoon black pepper
Into large strips or chunks, cut each chicken breast.
In a bowl, combine the milk and buttermilk. Add the chicken strips/chunks and marinate for at least 20 – 30 minutes up to overnight.
Set the oven to 375 degrees F.
Mix the mayonnaise, 1/2 cup of Parmesan cheese, and seasonings in a small bowl until well combined.
After marinating the chicken strips/chunks, transfer them into a 9 x 13-inch baking dish. Over the chicken, evenly spread the mixture and sprinkle with the remaining Parmesan.
Place in the preheated oven and bake for 40 – 45 minutes or until the chicken breasts are fully cooked. To get them extra browned on top, broil for 1 – 2 minutes.
Serve the melt in -your mouth chicken immediately with your favorite veggies, such as steamed fresh broccoli. If desired, season with fresh parsley. Enjoy!
