Ingredients
3 large chicken breasts, boneless and skinless, sliced lengthwise into thin cutlets
Β½ tsp salt
ΒΌ tsp ground black pepper
6 tbsp (50g) all-purpose flour
2 tbsp (30ml) olive oil
2 tbsp (28g) unsalted butter
3 cloves garlic, minced
1 c (240ml) chicken stock
1 c (240ml) heavy cream (double cream in the UK)
Β½ c (43g) parmesan cheese, grated
1 tsp chili flakes
ΒΌ tsp oregano
ΒΌ tsp thyme
β c (sun-dried tomatoes, chopped
1 tbsp fresh basil leaves
Instructions
Season the chicken with salt and pepper. Dredge in flour. Shaking off the excess.
In a skillet. Heat olive oil and butter. Over medium heat. Brown the chicken on both sides. About 4-5 minutes each. Then set aside.
In the same skillet. SautΓ© garlic. Until fragrant. Add chicken stock. And scrape the pan. To loosen any bits.
Lower heat to medium-low. Add heavy cream and parmesan cheese. Stir until the sauce thickens slightly. Season with chili flakes. Oregano, and thyme.
Return chicken to the skillet. Adding sun-dried tomatoes. Simmer until the chicken is cooked through. And the sauce has thickened.
