Korean Corn Cheese

Description

My favorite and go-to summer side dish! This Korean Corn Cheese is simple to make and ready in less than 20 minutes. This is also an amazing dip when serve with chips or bread.


Ingredients

Scale

4 oz. shredded mozzarella

2 ears fresh sweet corn kernels removed and cobbs discarded

1/2 c. mayonnaise

2 green onions, thinly sliced

salt and pepper to taste

1 1/2 tsp sugar


Instructions

Set the oven to 400 degrees F.

In a mixing bowl, place all the ingredients and mix well until combined.

Into a lightly greased baking dish, pour the mixture.

Place in the preheated oven and bake for about 10 minutes or until the cheese has melted and the mixture bubbles.

To a broiler, transfer the dish for about 2 minutes until the top is browned.

Enjoy the Korean Corn Cheese right away!

Notes

The added sugar brings out the natural sweetness of the corn and it also adds balance to the creamy mayo and salty cheese.

Variations:

Serve this dish all year round, and use either fresh, canned, or frozen corn.

You can use 3 tbsp thinly sliced chives in place of the green onions.

You can omit the sugar, and although the flavor will slightly change, this will still be delightful!

Feel free to use another mild flavor of melting cheese, such as fontina or gouda instead of the shredded mozzarella.
