1 small onion, diced

2 garlic cloves, minced

2 c chicken or vegetable broth

1 (14 oz) can of fire-roasted diced tomatoes, with liquid

3 (14 oz) cans of black beans, drained and rinsed

1 (4 oz) can of diced green chilies, with liquid

1/2 red bell pepper, diced

1 tsp chili powder

1 tsp smoked paprika

1/2 tsp ground cumin

1 tbsp lime juice

Salt and pepper, as needed

Optional toppings: chopped cilantro, sour cream, tortilla strips, sliced avocado, etc.


Instructions

Heat the olive oil in a large pot. Then add the chopped onions. And cook over medium heat. Until they start to brown slightly, about 5-7 minutes. Which enhances their flavor.

Next, mix in the minced garlic. Then pour in the chicken or vegetable broth. Add the fire-roasted tomatoes, black beans, diced green chilies, chopped red bell pepper, and all the spices.
